A very easy salad, perfect those trying to increase their vegetable intake. It is a good filler at lunch or a side salad at supper. A Peak of the Market recipe Ingredients:
1 cup carrot, shredded |
1/2 cup celery, finely diced |
1/2 cup red pepper, diced |
1/2 cup yellow pepper, diced |
1 cup tomato, diced |
1/4 cup feta cheese, crumbled |
Directions:
1. Mix all vegetables in a large bowl. 2. Toss with your favorite dressing. 3. (Light French, and italian dressing go well). |
