Super Foods Cookbook Ingredients:
2 lbs carrots |
3 cloves garlic, halved |
1 tablespoon lemon zest |
1 3/4 cups chopped parsley |
1/3 cup chopped fresh dill |
1 tablespoon olive oil |
2 teaspoons lemon juice |
Directions:
1. Cut the carrots into sticks about 3 inches long. Set aside. 2. In a blender, process the garlic and lemon zest until minced. 3. Add the parsley and dill. Process until finely minced, stopping to scrape down the sides as needed. 4. With the motor running, slowly add the oil and blend until a smooth paste is formed. 5. Blend in the lemon juice. 6. Spoon into a serving dish. Serve as a dip for the carrots. |
