My mum gave me this recipe. I absolutely love it. It's freezeable too so you can make a big pot, freeze it in portions sizes and enjoy it later when you don't feel like cooking. Ingredients:
1 lb hamburger |
1/2 cup onion, chopped |
1/2 cup green pepper, chopped |
1/2 teaspoon salt |
1/2 cup celery, sliced |
2 3/4 cups carrots, grated |
1 quart tomato juice |
1/2 cup water |
1/2 teaspoon garlic salt |
1 teaspoon sugar |
1 1/2 teaspoons pepper |
1/8 teaspoon marjoram |
2 cups cream of celery soup (i use a 10 oz condensed soup can with 1/2 cup water) |
grated mozzarella cheese, for topping |
Directions:
1. Brown hamburger and onion. 2. Drain. 3. Mix all ingredients in a big pot. 4. Stir occasionally. 5. Simmer until carrots are desired tenderness. 6. Do Not Boil. 7. Top with grated mozzarella cheese if desired. |
