Great comfort food that has a wonderful thick creamy texture. Easy to make, delicious and healthy! Ingredients:
2 tablespoons butter |
1 clove garlic, minced |
1 medium onion, finely chopped |
2 1/2 cups chopped carrots |
2 mcintosh apples, peeled,cored and chopped |
2 celery ribs, chopped |
1/2 cup long grain rice |
2 tablespoons chicken bouillon |
parsley (optional) |
salt (optional) |
4 cups water |
Directions:
1. Melt butter in a pan, saute onion, celery and garlic until tender. 2. Add water, bouillon, carrots, rice, and apple. 3. Bring to a boil. 4. Cover and simmer for 25 minutes or until carrots are tender. 5. Blend in blender. 6. Add salt and parsley to taste. |
