1 1/2 pounds carrots, sliced |
1/2 cup butter or margarine |
3 large eggs |
1/4 cup all-purpose flour |
1 1/2 teaspoons baking powder |
1 1/2 cups sugar |
1/4 teaspoon ground cinnamon |
Directions:
1. Cook carrot in boiling water to cover 20 to 25 minutes or until tender; drain. 2. Process carrot and remaining ingredients in a food processor until smooth, stopping to scrape down sides. Spoon into a lightly greased 1 1/2-quart souffle dish. 3. Bake at 350° for 1 hour and 10 minutes or until set. |
