Ingredients:
1 teaspoon(s) baking powder |
2 tablespoon(s) butter, melted |
7 cup(s) carrots, chopped (2lbs) |
cooking spray |
3 eggs, slightly beaten |
1/4 cup(s) fat free sour cream |
3 tablespoon(s) flour |
1 teaspoon(s) powdered suger |
1/4 teaspoon(s) salt |
2/3 cup(s) sugar |
1 teaspoon(s) vanilla |
Directions:
1. Preheat oven to 350*. Cook carrots in boiling water 15 minutes or until they are tender; drain. 2. Place carrots in food processor, process until smooth. Add sugar and rest of the ingredients, pluse to combine. 3. Spoon mixture into baking dish coated with cooking spray. Bake at 350 for 40 minutes or until puffed and set. 4. Sprinkle with powdered sugar. |
