Ok, now this is a strange one. Well at least it was to me. I love carrots and fell in love with this the first time I tried it. I had this at a friends house and just got the recipe from her. It is kind of sort of like Sweet Potato Soufflé except using carrots. Read more . Thanks Linda!! Ingredients:
2 cups mashed cooked carrots |
1/2 cup butter, softened |
1 cup brown sugar |
3 eggs |
1 tablespoon all-purpose flour |
1 teaspoon baking powder |
1 cup milk |
1/4 teaspoon cinnamon |
Directions:
1. Preheat the oven to 350 degrees. 2. In a large bowl, combine the carrots, butter, sugar, eggs, flour, baking powder, milk, and cinnamon and mix well. 3. Spoon into a 2-quart baking dish. 4. Bake for 45 minutes. |
