Deliously different! Carrots never tasted so great!
Ingredients:
2 cups cooked carrots
1/4 cup honey
1 teaspoon salt
1 1/2 cups light cream or half & half
3 tablespoons cornstarch
3 eggs, beaten
1/4 cup melted butter
Directions:
1. Process carrots, honey, salt and 3/4 cup of the cream in a blender until smooth.
2. Mix the remaining 3/4 cup cream and cornstarch in a small bowl.
3. Add to the blender with the eggs and butter and process until smooth.
4. Spoon into a greased 1 1/2 or 2 quart baking dish.
5. Bake at 400 degrees for 45 to 50 minutes or until set.
