This is my husband's family's answer to sweet potatoes since they don't like the traditional Thanksgiving dish. I found that I love this yummy way to cook carrots too. My family now enjoys this for holidays as well.
Ingredients:
2 lbs carrots
1 cup melted butter
4 eggs
1 1/2 cups sugar
4 tablespoons flour
2 teaspoons baking powder
2 teaspoons vanilla
Directions:
1. Cook the carrots until tender.
2. Mix all ingredients in a food processor.
3. Pour into a greased pan.
4. Bake at 350°F for 45 minutes.
