This is my husband's family's answer to sweet potatoes since they don't like the traditional Thanksgiving dish. I found that I love this yummy way to cook carrots too. My family now enjoys this for holidays as well. Ingredients:
2 lbs carrots |
1 cup melted butter |
4 eggs |
1 1/2 cups sugar |
4 tablespoons flour |
2 teaspoons baking powder |
2 teaspoons vanilla |
Directions:
1. Cook the carrots until tender. 2. Mix all ingredients in a food processor. 3. Pour into a greased pan. 4. Bake at 350°F for 45 minutes. |
