I modified this from a recipe I found in a Mart, Texas cookbook. I find that it has a very different flavor to most carrot recipes. My husband is not very fond of carrots but he eats this up every time! Ingredients:
2 bunches carrots, boiled till slightly tender |
1 cup cheddar cheese, grated |
1 tablespoon worcestershire sauce |
2 eggs |
salt |
red pepper flakes |
1/4 onion, finely diced |
2 teaspoons prepared mustard |
1/4 cup butter |
1/2 cup fine breadcrumbs |
Directions:
1. Grate carrots into a mixing bowl and add the rest of the ingredients. Beat until eggs are blended. Pour mixture into a buttered casserole and bake for 30 minutes at 350°. Spread bread crumbs evenly over the top and add pats of butter. Bake and additional 10 minutes. |
