Ingredients:
2 lbs carrots
1 cup sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 teaspoon salt
1 cup light cream
Directions:
1. Preheat oven to 400°F.
2. Cook peeled carrots until soft.
3. Place in food processor; add remaining ingredients and process until smooth.
4. Bake for about 30 minutes.
