Ingredients:
2 1/2 tablespoons fresh lemon juice
1 tablespoon olive oil
1 tablespoon honey
1/8 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 1/2 cups grated carrot (about pound)
1 1/2 cups diced granny smith apple (1 small)
Directions:
1. Combine first 5 ingredients in a medium bowl, stirring with a whisk. Add carrot and apple; toss well.
