Carrot Salad with Golden Chardonnay Raisins |

A sweet and savory carrot salad. Very simple and easy to make with pre-shredded organic carrots. Golden raisins plumped with Chardonnay wine add sweetness and tang. Ingredients:
1/3 cup golden raisins |
1/2 cup chardonnay white wine |
2 cups shredded carrots |
1/4 cup mayonnaise |
2 tablespoons minced chives |
Directions:
1. Soak raisins in Chardonnay white wine in a bowl until plump, about 1 hour. 2. Drain and reserve any remaining liquid from the plumped raisins. 3. Mix carrots, mayonnaise, and chives together in a large bowl. 4. Fold plumped raisins into carrot mixture. 5. Mix reserved soaking liquid into the salad a tablespoon at a time until desired texture is achieved. |
