Carrot Salad Roll Ups

These are a great source of fiber, and low in fat and salt! From the Almond Board!
Ingredients:
4 cups finely grated carrots
1/2 cup fresh lemon juice
1/2 cup chopped parsley
1/4 cup currants
1/4 cup blanched slivered almond, toasted
2 teaspoons ground cumin
12 butter lettuce leaves
Directions:
1. Combine all ingredients except lettuce in small bowl. Wash and gently dry lettuce leaves; remove hard core ends. Spoon 1/3 to 1/2 cup carrot mixture across center of each lettuce leaf. Tuck in ends and roll tightly.
2. Enjoy!
