These are a great source of fiber, and low in fat and salt! From the Almond Board! Ingredients:
4 cups finely grated carrots |
1/2 cup fresh lemon juice |
1/2 cup chopped parsley |
1/4 cup currants |
1/4 cup blanched slivered almond, toasted |
2 teaspoons ground cumin |
12 butter lettuce leaves |
Directions:
1. Combine all ingredients except lettuce in small bowl. Wash and gently dry lettuce leaves; remove hard core ends. Spoon 1/3 to 1/2 cup carrot mixture across center of each lettuce leaf. Tuck in ends and roll tightly. 2. Enjoy! |
