This is always popular and the pine nuts add a little surprise to make it Italian. Ingredients:
5 medium carrots, grated |
1/2 cup raisins |
1/2 cup pine nuts |
3 tablespoons vegetable oil |
1 stalk celery |
3 sprigs italian parsley |
3 cl garlic |
1/4 green pepper |
2 green onions |
2 tablespoons lemon juice |
1 tablespoon worcestershire sauce |
2 tablespoons vinegar |
1 teaspoon salt |
1/2 teaspoon pepper |
1 tablespoon dry mustard |
Directions:
1. Grate the carrots; set aside. 2. Plump the raisins by zapping them in the microwave for 3 minutes in 1/2 Cup water. Drain and add to grated carrots; add pine nuts. 3. Blend remaining ingredients till smooth. Pour over carrot-raisin mixture. 4. Cover and refrigerate. |
