Easy and pretty salad, good even in the winter as long as you have a good source of winter carrots. Ingredients:
carrots |
tarragon |
lemon juice |
apple cider vinegar |
Directions:
1. Shred the carrots, either with a shred blade on a food processor or with a hand grader. You are after long shreds, not chunks. Put the carrots in a bowl. 2. Splash some lemon juice and apple cider vinegar on top. You are looking to end up with a little liquid in the bottom of the bowl when you're done, but not soup. I never measure. 3. Sprinkle tarragon on top for flavor and color. |
