A sweet, light salad that I bring for lunch more days than not! I use a 10% MF yogurt with lemon flavour, because I love the yogurt, but anything will work well.
Ingredients:
3 carrots
1 apple
3 tbsp. yogurt
1 tsp. lemon juice
2 tbsp. shredded coconut
1/3 cup raisins
Directions:
1. Coarsely grate Carrots
2. Cube Apple
3. Combine all
4. Let sit in refrigerator until ready to eat
5. Enjoy
