A deliciously different side dish for an alfresco meal. Ingredients:
500 g carrots |
1/2 cup dates, chopped finely |
1 orange, juice of |
1 tablespoon extra virgin olive oil |
1/2 teaspoon ground cumin |
salt and pepper |
1/2 cup coriander, torn |
Directions:
1. Soak the dates in the orange juice. 2. Grate the carrots coarsly. 3. Toss with all remaining ingredients. |
