As my father would say, The orange helps the plate not be wall-to-wall brown. Prep: 15 minutes; Bake: 1 hour. Ingredients:
1/2 cup matzo meal |
1/4 cup potato starch |
1/4 teaspoon salt |
1 pound carrots, grated |
1/2 cup sugar |
1/4 cup raisins |
1/2 cup white wine |
zest of 1 lemon (2 to 3 teaspoons) |
1/4 cup lemon juice (about 2 lemons) |
1 large egg |
1 teaspoon ground ginger |
1 teaspoon cinnamon |
1/4 cup margarine, melted |
Directions:
1. Preheat oven to 350°. Mix matzo meal, potato starch, and salt in a large bowl. Add carrot and next 8 ingredients; mix well. Stir in melted margarine. Pour mixture into a greased ring mold or 9-inch baking dish, and bake at 350° for 1 hour or until wooden pick inserted in center comes out clean. Let cool on a wire rack about 10 minutes. Turn out onto a plate. Serve at room temperature. |
