This rice goes with ANYTHING! Once you have the basics you can add whatever you like. Ingredients:
1 c. jasmine rice ( can substitue basmati rice) |
1 1/2 c. chicken broth |
1/4 roasted peanuts ( optional) |
1 tbsp butter |
1 sm. onion sliced |
1 tbsp grated ginger root |
3/4 c. grated carrots |
1/4 cilantro |
salt to taste |
cayenne pepper to taste |
pineapple (optional) |
Directions:
1. Rinse rice 2. Combine rice and water in a medium saucepan. Cook as directed 3. While rice is cooking, pulverize peanuts, if using, if using 4. Melt butter in a large skillet over medium-high heat. 5. Saute onion until transparent. 6. Stir in ginger, cilantro and carrots. 7. Salt to taste. 8. Reduce heat to low and cover to steam 5 minutes. 9. Stir in cayenne pepper,peanuts and pineapple if using. 10. When rice is done add to skillet and stir gently to combine with other ingredients. |
