Carrot-Raisin Salad With Orange-Nutmeg Dressing |

From Southern Living magazine, December 1997. Ingredients:
1 (8 ounce) container light sour cream |
1/2 teaspoon ground nutmeg |
2 tablespoons sugar |
1 1/2 tablespoons lemon juice |
1 tablespoon grated orange rind |
1/2 teaspoon salt |
1 lb carrot, scraped and shredded |
1 (8 3/4 ounce) can crushed pineapple, drained |
1/2 cup raisins |
Directions:
1. Stir together first 6 ingredients in a large bowl; add carrot, pineapple, and raisins, tossing gently. Cover and chill. |
