Ingredients:
2 1/2 cups shredded carrots
3/4 cup chopped celery
1/3 cup raisins
1/3 cup coarsely chopped walnuts
3/4 cup fat-free mayonnaise
1/2 teaspoon dijon mustard
1 -2 teaspoon sugar
1/8 teaspoon salt
lettuce leaf (to garnish)
Directions:
1. Combine carrot, celery, raisins and walnuts in a medium bowl. Add remaining ingredients, except lettuce, stirring until blended.
2. Serve on lettuce lined plates.
