This recipe is from Luby's Cafeteria. DH loves this! Ingredients:
2 lbs carrots, peeled and trimmed |
1 cup crushed pineapple, drained |
1 cup raisins, plumped |
1 cup mayonnaise |
1/2 cup powdered sugar |
Directions:
1. Shred carrots using a large hole grater or food processor. 2. In a large bowl, comine the shredded carrots, raisins and pineapple. 3. In a small bowl, mix the mayonnaise and powdered sugar until well blended, pour over carrot mixture and toss lightly to coat. 4. Cover and refrigerate at least 2 hours. |
