This is one of my favorite comfort foods as it brings back memories of my childhood. My Mom used to make this all the time and this is her recipe...... Ingredients:
2 cups grated carrots |
1 cup crushed pineapple, drained |
1 tablespoon lemon juice |
1/4 teaspoon coconut extract |
1/4 cup raisins |
8 teaspoons mayonnaise |
2 teaspoons sugar |
Directions:
1. In a medium bowl, mix all ingredients well. 2. Chill at least 1 hour. |
