I first had this when I moved south and loved it. It is a great salad to take to a picnic or pot luck dinner. Even the kids will like it! Ingredients:
1/2 cup raisins |
1 cup boiling water |
1/2 cup shredded coconut |
1/2 cup pineapple chunk |
1 cup mayonnaise |
2 lbs shredded carrots |
Directions:
1. Place raisins in boiling water for about 5 minutes to soften and plump them up. 2. Make sure pineapple is well drained. 3. Mix all ingredients together and chill at least 1 hour before serving. |
