Haven't tried this yet, but it looks absolutely yummy. Ingredients:
3 tablespoons butter |
3 tablespoons flour |
1 teaspoon salt |
1/4 teaspoon pepper |
1 1/2 cups milk |
1 cup shredded cheddar cheese, divided |
3 cups grated peeled uncooked potatoes |
1 cup grated carrot |
2 tablespoons grated onions |
Directions:
1. In a saucepan over medium heat, melt butter. 2. Whisk in the flour, salt and pepper until smooth. 3. Gradually stir in milk. 4. Bring to a boil; cook and stir 2 minutes. 5. Reduce heat; add 1/2 cup cheese, stirring until melted. 6. Add the potatoes, carrots, and onion. 7. Transfer to a greased 8-in. square baking dish. 8. Cover and bake at 350 degrees for 1 hour. 9. Uncover; sprinkle with the remaining cheese. 10. Bake 15 minutes longer or until potatoes are tender. |
