Carrot/Pineapple/Raisin Salad |

Easy to prepare, low fat salad using shredded carrots, crushed pineapple and raisins. Ingredients:
18 oz shredded carrots |
12 oz canned crushed pineapple, drained |
1/2 cup raisins |
3/4 cup hellman's reduced fat mayonnaise |
1 splenda, to taste |
1 salt, to taste |
1 pepper, to taste |
Directions:
1. In a large bowl, mix together the carrots, pineapple, raisins and mayonnaise until well combined. 2. Add Splenda (or favorite sugar substitute), salt and pepper to taste. 3. Chill at least an hour before serving and stir first before serving. 4. I like to serve this on a bed of shredded lettuce. |
