Carrot Pineapple Bread

This makes a great breakfast or brunch bread. It can also be used for muffins if you prefer.
Ingredients:
3 eggs, beaten
2 cups granulated sugar
1 cup oil (not olive)
1 cup grated carrots
1 cup crushed pineapple- do not drain
1/2 cup chopped walnuts
2 tsp. vanilla
3 cups all purpose flour
1 1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. soda
1 tsp kosher sal
Directions:
1. Combine eggs, sugar, oil, carrots, pineapple and vanilla in a large bowl. Mix well.
2. Combine all dry ingredients together and add to the above wet mixture. Mix well, then add walnuts.
3. Bake in 2 greased and floured loaf pans for 1 hour at 350 degrees. If using dark non-stick pans, lower oven temp by 15 degrees.
