                    This makes a great breakfast or brunch bread. It can also be used for muffins if you prefer. Ingredients: 
                    
                        
                                                3 eggs, beaten  |  
                                                2 cups granulated sugar  |  
                                                1 cup oil (not olive)  |  
                                                1 cup grated carrots  |  
                                                1 cup crushed pineapple- do not drain  |  
                                                1/2 cup chopped walnuts  |  
                                                2 tsp. vanilla  |  
                                                3 cups all purpose flour  |  
                                                1 1/2 tsp. cinnamon  |  
                                                1/4 tsp. nutmeg  |  
                                                1 tsp. soda  |  
                                                1 tsp kosher sal  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Combine eggs, sugar, oil, carrots, pineapple and vanilla in a large bowl. Mix well. 2. Combine all dry ingredients together and add to the above wet mixture. Mix well, then add walnuts. 3. Bake in 2 greased and floured loaf pans for 1 hour at 350 degrees. If using dark non-stick pans, lower oven temp by 15 degrees.                              |
