My mother clipped this from a newspaper years ago. It always turns out moist and scrumptious- this will quickly become everyone's favorite quickbread. Ingredients:
1 1/2 cups all-purpose flour |
1 cup sugar |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon ground cinnamon |
1/4 teaspoon salt |
2 eggs, beaten |
1 cup shredded carrot |
2/3 cup vegetable oil |
1/2 cup crushed pineapple, undrained |
1 teaspoon vanilla extract |
Directions:
1. Combine flour, powder, soda, cinnamon, and salt in a small bowl. 2. Combine remaining ingredients in a mixing bowl; add dry to wet. 3. Pour into a greased loaf pan, and bake at 350 degreese for about 50 minutes, or until a wooden pick inserted into the center comes out clean. |
