A superhealthy side dish which tastes good too! Ingredients:
1/2 tablespoon oil |
1 onion, chopped |
2 teaspoons cumin seeds |
2 large carrots, grated |
7 ounces basmati rice |
2 1/2 cups vegetable stock |
Directions:
1. Heat the oil in a pan. 2. Add the onion and cumin and fry for a few minutes Add the carrots and stir well, then stir in the rice until glistening. 3. Add the stock and bring to the boil. Cover and cook gently for about 10 mins until the rice is tender and the stock absorbed. 4. Spoon the rice onto 4 warm plates, serve with your choice of main dish. |
