CARROT PATTIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Boone Estate in Midlothian, Texas in 1992. Ingredients:
1/2 pound carrots grated |
1 clove garlic minced |
4 eggs |
1/4 cup all purpose flour |
1/4 cup bread crumbs |
1/2 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
2 tablespoons vegetable oil |
Directions:
1. Combine carrots, garlic, eggs, flour, bread crumbs, salt and black pepper then mix well. 2. Heat oil in a frying pan over medium high heat. 3. Make mixture into patties and fry until golden brown on each side |
