My family loves these Carrot-flecked goodies... Can't keep the cookie monsters away! Ingredients:
1c. butter, softened |
1c. shortening |
1-1/2c. sugar |
1-1/2c. packed brown sugar |
4 eggs |
2tsp. vanilla |
2c. shredded carrots |
4c. quick-cooking oats |
3-1/2c. all-purpose flour |
2tsp. baking soda |
2tsp. salt |
1c. chopped walnuts |
1c. miniature semisweet chocolate chips |
Directions:
1. In a large mixing bowl, cream the butter, shortening and sugars. Beat in the eggs and vanilla. Add carrots; mix well. 2. Combine the oats, flour, baking soda and salt; add to the creamed mixture and mix well. Stir in the walnuts and chocolate chips. Cover and refrigerate for at least 4 hrs. 3. Drop by rounded tablespoonfuls 3 inches apart onto baking sheets coated with cooking spray. 4. Bake at 375F for 10 minutes or until lightly browned. 5. Cool for 2 minutes before removing to wire racks. |
