These old-fashioned cookies are big, soft and spicy and very good keepers. Ingredients:
1 cup brown sugar |
1/2 cup shortening (soft) |
2 eggs |
1/2 cup milk |
1 cup grated raw carrot |
1 1/2 cups flour |
1 teaspoon baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon cinnamon |
1/2 teaspoon nutmeg |
2 cups oatmeal (quick cooking type) |
1 1/2 cups seedless raisins |
Directions:
1. Cream sugar, shortening and eggs til light and creamy. 2. Add milk, carrots and stir til well mixed. 3. Mix together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Add remaining ingredients and stir til raisins are well coated with flour mixture. 4. Mix with creamed mixture. 5. Drop by tablespoonfuls onto greased cookie sheet. 6. Bake 375F 15 mins. |
