Good stuff, and healthy, too. Ingredients:
1/2 cup butter |
3/4 cup brown sugar |
1 egg |
1 cup all-purpose flour |
1 teaspoon baking powder |
1 teaspoon cinnamon |
1/2 teaspoon ground ginger |
1/2 teaspoon salt |
1 cup grated carrot |
1 teaspoon vanilla |
1/3 cup raisins |
1/2 cup walnuts, chopped |
Directions:
1. Preheat oven to 350. 2. Melt the butter, and blend with sugar in a medium mixing bowl. 3. Beat in the egg. 4. Combine the dry ingredients, and mix into the butter mixture. 5. Stir in grated carrots, vanilla and rasins. 6. Spoon into a buttered 8x8 pan. 7. Sprinkle with nuts. 8. Bake for 25-20 minutes. 9. After cooled, cut into squares. |
