A healthy vegetarian loaf, ideal for those times when you feel like a break from a meat based main. Serve with fresh vegetables or green salad. Ingredients:
1 medium onion |
1 garlic clove, crushed |
2 tablespoons olive oil |
200 g mushrooms |
1 teaspoon basil |
1/4 teaspoon thyme |
1/2 teaspoon salt |
black pepper, to taste |
400 g carrots, grated |
1/2 cup breadcrumbs, dried |
1/2 cup cheese, grated |
1/2 cup milk |
2 eggs |
2 tablespoons breadcrumbs, dried |
2 tablespoons cheese, grated |
paprika |
Directions:
1. Preheat oven to 180°C. 2. Finely chop onion and garlic then cook in the oil until the onion is soft. 3. Add the sliced mushrooms and continue cooking until they have softened. 4. Transfer the onion and mushroom mixture to a medium sized bowl and then add the next 9 ingredients. Mix well together, then pour into a well greased and lined loaf tin.Sprinkle with the remaining breadcrumbs and cheese. Dust lightly with the paprika. 5. Cover loaf tin with foil and bake for 30 minutes, then uncover and bake a further 30 minutes or until the centre is firm when pressed. |
