Ingredients:
2 1/2 teaspoon(s) baking powder |
1 egg |
1 3/4 cup(s) flour |
2 good sized carrots |
2/3 cup(s) milk |
1/2 cup(s) raisins |
1 teaspoon(s) salt |
1/4 cup(s) sugar |
1/3 cup(s) vegetable oil |
Directions:
1. Mix flour, baking powder and salt in a bowl. Place milk, oil, egg, sugar and carrots in a blender or food processor and blend until carrots are very finely chopped Pour over dry ingredients. Mix and add raisins. Spoon into greased muffin pans, filling 2/3 full. Bake at 375 degrees for 25 minutes. Makes 8-10 muffins. |
