Ingredients:
2 1/4 cups flour |
1/3 cup brown sugar |
1 teaspoon cinnamon |
1 teaspoon vanilla |
1/2 teaspoon baking powder |
3 grated carrots |
8 ounces non-fat vanilla yogurt |
1/2 cup egg substitute |
1/2 cup sugar |
1 teaspoon baking soda |
1/4 teaspoon ginger |
1/2 cup raisins |
1/2 cup unsweetened applesauce |
Directions:
1. Mix dry ingredients together. 2. Mix liquid ingredients, combine; mixing only until all ingredients are moist. 3. Pour into greased jumbo muffin cups. 4. Bake at 350 degrees for 30 minutes. |
