Ingredients:
2 1/4 cups flour
1/3 cup brown sugar
1 teaspoon cinnamon
1 teaspoon vanilla
1/2 teaspoon baking powder
3 grated carrots
8 ounces non-fat vanilla yogurt
1/2 cup egg substitute
1/2 cup sugar
1 teaspoon baking soda
1/4 teaspoon ginger
1/2 cup raisins
1/2 cup unsweetened applesauce
Directions:
1. Mix dry ingredients together.
2. Mix liquid ingredients, combine; mixing only until all ingredients are moist.
3. Pour into greased jumbo muffin cups.
4. Bake at 350 degrees for 30 minutes.
