Carrot Horseradish Casserole |

Ingredients:
2 or more pound(s) long carrots peeled & sliced |
1 med onion diced sauteed in little butter |
1/4 teaspoon(s) black pepper |
2 tablespoon(s) prepared horseradish |
2 cup(s) mayonnaise |
20-25 ritz crackers crushed |
1/4 cup(s) butter melted |
Directions:
1. Boil carrots in water ( use about 1/2 inch of water in the bottom of the pot and get it boiling before you put in carrots so you mostly steam them). Mix mayonnaise, onion, horseradish and pepper with about a half cup of the carrot cooking liquid to make a sauce not too thin. Pour into baking dish sprayed with non-stick spray. Combine melted butter and crackers and spread over top of carrots. Bake uncovered in 350 degree oven for about 30-45 Minutes or until bubbly and golden brown. |
