It was my first time preparing for a large crowd and I was nervous to bring this dish along with me . But everybody who attended the multi racial party just loved it . Ingredients:
20 medium carrots or 8 c grated carrot |
6 tbsp ghee |
6 c milk |
2 c sugar |
a few cashewnuts or almonds |
few cardamoms , powdered |
Directions:
1. Wash and grate the carrots finely. 2. Fry the grated carrots in ghee until the colour turns bright 3. Keep churning the carrots occasionally to avoid them from getting burnt. 4. Pour the milk and cook the carrots still soft . 5. Add sugar and simmer till the mixture thickens 6. Add the flavouring . 7. Sprinkle with cashew nuts or flaked almonds. 8. Serve hot or cold . |
