Carrot Ginger Soup

Try adding other spices like cinnamon, nutmeg and cardamom.
Ingredients:
15 carrots
1 celery rib, large dice
1 onion, large dice
2 tablespoons fresh ginger, minced
1 orange, juice of
4 cups vegetable broth or 4 cups water
1 tablespoon butter
salt and pepper
Directions:
1. In a small amount of oil sweat celery and onion until translucent.
2. Add carrots and continue to sweat.
3. Add ginger, orange juice and broth. Simmer until carrots are very tender.
4. Puree and pass through a mesh strainer.
5. Season to taste and finish with a pat of butter.
