CARROT GINGER MUFFIN Ingredients:
1 cup whole wheat flour |
1 tsp baking powder |
1 egg, beaten |
1/3 cup brown sugar |
1/3 cup white sugar |
2 tbsp margarine |
1 large carrot, finely shredded |
1/2 cup skim milk |
1 tsp ginger |
1/8 tsp cinnamon |
1/8 tsp ginger |
1/2 tsp allspice |
1 tsp vanilla |
Directions:
1. PREHEAT OVEN TO 350 2. IN LARGE BOWL COMBINE FLOUR AND BAKING POWDER WITH THE MARGARINE, USING A PASTRY CUTTER OR FINGERS TO BREAK INTO PIECES 3. ADD SUGARS, GINGER, CARROT, MILK, VANILLA AND SPICES TO THE MIXTURE AND THOROUGHLY 4. MIX WITH A WOODEN SPOON OR SPATULA 5. BAKE FOR 25 MINUTES AND LET COOL |
