This is a great fritter and is wonderful as a side or appetizer. My brothers and I get started on these and we can't quit. We got this recipe from my Aunt Maggie over 30 years ago. Enjoy Ingredients:
1 cup carrots cooked and mashed |
1 cup flour |
2 teaspoons granulated sugar |
1 egg |
1 teaspoon baking powder |
1/2 teaspoon salt |
1/2 cup milk |
Directions:
1. Sift dry ingredients together then add egg to milk and mix with dry ingredients. 2. Fold in carrots then drop spoonfuls into hot fat and fry until brown on both sides. 3. Drain well on paper towels. |
