Super Foods Cookbook Ingredients:
1/4 cup egg substitute |
1 tablespoon flour |
2 cups shredded carrots |
2 scallions, minced |
2 tablespoons minced parsley |
1/2 teaspoon dried tarragon |
2 egg whites |
1 teaspoon olive oil |
Directions:
1. In a large bowl, combine the egg substitute and flour. Stir in the carrots, scallions, parsley and tarragon. 2. In a separate bowl, whip the egg whites until stiff. Fold into carrot mixture. 3. Heat the oil on a nonstick griddle. 4. Drop 1/4 cup mounds of batter onto the hot griddle. Flatten a bit with the back of a spatula. 5. Fry on both sides until golden brown. |
