This is a dish I came up with to keep from eating pasta, lol. Hope you enjoy it. I had it with a light shrimp in butter sauce.
Ingredients:
3 carrots, cleaned and the ends chopped off
1 -2 tablespoon butter
Directions:
1. Using a vegetable peeler make ribbons of the carrots.
2. Add carrots to a pot of boiling water and cook until tender crisp.
3. Drain.
4. Stir in butter.
