This is a recipe by request-never personally made, but sounds good. Ingredients:
4 -6 unpared cucumbers |
6 medium carrots |
2 medium onions |
2 teaspoons salt |
2 1/2 cups sugar |
1 1/2 cups cider vinegar |
1 1/2 teaspoons celery seeds |
1 1/2 teaspoons mustard seeds |
Directions:
1. Coarsely grind to the following amounts of each cucumbers (3 1/2 cups), carrots (1 1/2 cups) and onions (1 cup). 2. Combine them and add salt. 3. Let stand 3 hours; drain. 4. Combine sugar, vinegar celery seed and mustard seed. 5. Bring to a boil. 6. Add vegetables to the above. 7. Simmer uncovered for 20 minutes. 8. Seal at once in hot sterilized jars. 9. Makes 2 1/2 pints. 10. Chill before serving. |
