A tasty version of corn bread Ingredients:
1 cup cornmeal |
1 cup finely grated carrot |
2 tablespoons honey |
1 teaspoon salt |
2 tablespoons vegetable oil |
3/4 cup boiling water |
2 eggs, separated |
Directions:
1. Mix cornmeal, carrots, oil, honey, and salt. Stir in boiling water. 2. Stir egg yolks into cornmeal mixture. Stiffly beat the eggs whites. 3. Fold the stiffly beaten egg whites into cornmeal mixture. 4. Pour into a greased loaf pan. 5. Bake at 400ยบ for 30 minutes. |
