A different take on the usual corn bread type muffin, this is sweetened and has the added bonus of carrot, raisin and nuts. Ingredients:
1 cup flour |
1 cup corn meal |
4 tsp of baking powder |
1/2 tsp of salt |
1/4 cup of firmly packed brown sugar |
1 cup of grated carrot |
1/4 cup of raisins |
1/4 cup of chopped pecans |
1 egg beaten |
1 cup of milk |
1/4 cup of canola oil |
Directions:
1. Grease muffin tins very well. 2. Mix dry ingredients. 3. Add sugar, raisins and nuts. 4. Add egg, milk and oil. 5. Mix well. 6. Fill prepped muffin tins 3/4 full. 7. Bake in preheated oven 400 degree oven for 20-25 minutes. 8. Serve with whipped honey butter warm for breakfast. |
