I have been making these cookies since I was a kid! These cookies are very unique. Even though they have carrots in them, the carrots do not give them the flavor you would expect. The lemon extract gives the cookies a refreshing flavor and the raisins give them extra flavor and texture. Ingredients:
1 c sugar |
1/2 c shortening |
1 egg, beaten |
1 tsp lemon extract |
1/2 c raisins |
1/2 c raw carrots, finely grated |
2 c flour |
2 tsp baking powder |
1/2 tbsp salt |
Directions:
1. Cream sugar with shortening. Beat in egg and lemon extract. Stir in carrots and raisins, then sifted dry ingredients. Drop by spoonfuls on greased baking sheet. Bake at 400 degrees for 10-12 minutes. Makes 3 dozen. 2. Variation: You may substitute one cup of honey for the sugar. It changes the texture of the cookie, making it more cake-like, but it is still delicious! |
