This is from a Food Editor in Florida. The book is called Cookies Food Writer's Favorites. Ingredients:
1/2 cup butter or 1/2 cup margarine |
1 cup firmly packed brown sugar |
1/2 cup granulated sugar |
2 eggs, well beaten |
2 cups sifted all-purpose flour |
2 teaspoons baking powder |
1/2 teaspoon baking soda |
1/2 teaspoon salt |
1 teaspoon ground cinnamon |
1/2 teaspoon ground nutmeg |
2 cups quick-cooking rolled oats, uncooked |
1 cup raisins |
1 cup shredded carrot (not too finely) |
1 cup chopped nuts |
Directions:
1. In a large mixing bowl with an electric mixer, beat butter, brown sugar and granulated sugar until well mixed. 2. Add eggs; mix well. 3. Sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg; add to butter mixture and mix well. 4. Stir in oats, raisins, carrots and nuts. 5. Drop dough by tablespoonfuls onto ungreased baking sheets. Flatten slightly. 6. Bake in a preheated 350° degree oven 25 to 30 minutes, or until done. 7. Transfer to wire racks to cool. |
