I'm not big on cooked carrots but a friend was able to entice my mother to eat this during her battle with cancer. It tastes much like sweet potatoes.
Ingredients:
3 cups mashed, cooked carrots (2 cans of stokley baby sweet carrots)
1/2 cup sugar
2 tbsp flour
1/4 tsp cinnamon
2 tsp baking powder
2 cup milk
3 eggs, well beaten
1/2 stick butter, melted
Directions:
1. Scrape carrots and cook until tender. Mash carrots with a potato masher. Mix in rest of ingredients. Pour into a greased casserole baking dish. Bake in 325 degree oven for 45 minutes or bake about 10 minutes in microwave oven.
